Cauliflower is a cultivated variant of the vegetable cabbage, botanically called Brassica oleracea. Cauliflower is easily recognized by the white fleshy flower sprouts that converge in a head. Cauliflower originally comes from Anatolia and belongs to the flowering vegetables. The cabbage has many different local names such as cauliflower, cheese cabbage, cauliflower, black cabbage or minaret cabbage. Cauliflower is very popular with the Germans and with 23 calories per 100 grams, it is not only low in calories and easily digestible, but also healthy because it contains ball vitamins and numerous vitamins and minerals. Cauliflower also contains glucosinolates, which have an anti-cancer effect. Cauliflower is also said to have a helpful effect in preventing diabetes. Because cauliflower contains a lot of blood-clotting vitamin K, people who take blood thinners based on so-called phenprocoumone should refrain from consuming large amounts. (vb)
